Our Cabernet Sauvignon is a fantastic product from Tikveshija region. Produced from 25-year old vines, this wine is full bodied and lustrous ruby red. It is a symphony of aromas: vanilla, cocoa and black plum jam, which is also present in the taste. Aged in bottles for 12 months, in the mouth, its vigorous flavor and splendid body conclude in a complex and exceptionally long-lasting finish. Developed in a year of exceptional vintage with a limited production, it is an opportunity that should not be missed. A pure rhapsody of flavour!

We recommend to be served at room temperature in combination with all types of red meat and for those who seek the thrill of experiments; we are proposing the combination with traditional Asian dishes.

Vintage:
A warm spring followed a moderately rainy winter, giving an early start to the 2005 growing season. The rainfall was in normal amount and equally dispersed throughout the year. These conditions, which continued through most of the harvest season, fostered high-quality grapes and set a relatively easy pace for the vineyard and winemakers. The harvest took place on October 12, 2005, from special “terroir” on 500 meters altitude above sea level. The grapes were collected from 25 years old vineyards. Each vineyard block was hand harvested and collected in crates in order to select the best parts from the vine thus enabling the winemakers to have complete control over the fermentation process. The harvest took place in early morning hours in order to preserve the aromas in its best condition.
Winemaking:
- The fruit is crushed
- 24 hours cold maceration on 12°C
- 10 days of fermentation in the midst of maceration on 20-24° C
- Malolactic fermentation in presence of French Chips followed by processes of fining and stabilizing of the young wine
- The wine is aged in bottles 8-12 months before release
