Flavour descriptors:
This wine is an excellent dry red wine with lively ruby colour and elegant aroma of cherry, dry leaf and mineral. On the palate, it is a very well balanced, round wine with dominant spice flavour and an excellent finish. A treat to be enjoyed on all occasions.
Food pairing:
We recommend to be consumed at 18-20°C with sea food and spicy food.

Vintage:
A warm spring followed a moderately rainy winter, giving an early start to the 2005 growing season. The rainfall was in normal amount and equally dispersed throughout the year. These conditions, which continued through most of the harvest season, fostered high-quality grapes and set a relatively easy pace for the vineyard and winemakers team.
High summer temperatures are typical for Tikveshija Vineyard Region. Therefore, the grapes are picked earlier than the usual harvest periods in other parts of Europe. The grapes are hand picked from 12 to 13 September 2005 at optimum flavour ripeness and the best balance between the acidity and sugar.
Winemaking:
- Grapes are crushed and destemmed while preserving the temperature below 12°C
- If necessary chilled to a certain temperature
- The fruit is settled in inox tanks for fermentation in presence of French chips
- The temperature is controlled during the fermentation as well as the regimes of aeration and the decreasing of the sugar levels.
- Malolactic fermentation to fine tune acids and textural balance
- The wine is aged for 6 months in bottles before release
