Vintage:
The 2007 season was extraordinary in many ways, it was the warmest, certainly the earliest and without doubt, one of the best for fruit quality. We experience unusual warm temperatures in February, followed by cool temperatures in March, which was ideal for flavour development. The summer was long; extremely hot offering potential for developing higher sugar levels than usual. The Chardonnay semi-sweet harvest took place in early days of September with sugar levels reaching above 24,5 and the grapes being in the best condition for production of this type of a semi-sweet wine. The grapes are hand – picked and packed in crates taking care not to destroy the grapevine in this ripeness stage. This way of collecting the grapes, ensures total control over the fermentation process as the fruit remains whole.
Winemaking:
- The fruit is crushed and destemmed while preserving the temperature below 12°C
- Pressing
- Must clarification
- Fermentation while controlling the temperature
- Fermentation is stopped with cold when sugar level reaches 20 grams per litter
