Sauvignon Blanc 2015

Flavour Descriptor:

Sauvignon Blanc is a wonderful dry white wine with pale yellow and shades of green colour. The combination of aromas is exceptionally rich with dominance of tropical fruits, white peach and white flowers. It has a great harmony and structure with long lasting and impressive finish.

 

Food pairing: 
We recommend to be consumed at 10-12°C with chicken, fish or cheese. We also recommend it in combination with chocolate cake.

Total acid: 5,3 g/lit
Residual sugar: 1 g/lit
Alcohol: 13,3% by volume

 

Vintage:
After the moderate temperatures in February, the spring and the beginning of the summer were characterized with lower temperatures than the usual for the Tikveshiya region. However, in the second half of the summer we had enough sun and warmth which enabled the normal ripening of the grapes. The rainy weather during September led to a rather late harvest. The harvest took place in the moment of the technological ripeness of the grape, when the sugar and the acids are most balanced. The grapes were hand harvested and picked very early in the morning and late in the evening when the temperature is low in order to preserve the aromas.

 

Winemaking:

The grapes are crushed and settled into the inox tanks for maceration while adding enzymes to extract the aromas.

  • This process lasts for about 6-8 hours at the temperature of 8-10 °C
  • Grapes are pressed and clear part is separated into another tank
  • Processes of fining
  • Selected yeasts are added and fermentation takes place at controlled temperature of 14-15 °C
  • The fermentation lasts for 15 to 20 days followed by processes of fining and stabilizing of wine
