Flavour descriptors: 

Chardonnay is an excellent dry white wine with a distinctively yellow-green color. It boasts attractive, multilayer aromas of pineapple, sweet citrus and ripe pear, and also a feel of spiciness. The taste is gentle and balanced with a well pronounced freshness and a pleasant finish.


Food pairing:

It is best consumed chilled at 10-12 °C in combination with fish, pasta and desserts. It also goes well with soft cheeses like Camembert and Brie. Cheers!

Vintage:
After the moderate temperatures in February, the spring and the beginning of the summer were characterized with lower temperatures than the usual for the Tikveshiya region. However, in the second half of the summer we had enough sun and warmth which enabled the normal ripening of the grapes. The rainy weather during September led to a rather late harvest. The harvest took place in the moment of the technological ripeness of the grape, when the sugar and the acids are most balanced. The grapes were hand harvested and picked very early in the morning and late in the evening when the temperature is low in order to preserve the aromas.

 

Winemaking:

  • Harvested from carefully selected vineyards
  • The grapes were fully destemmed
  • 8 hours cold maceration (skin contact) in presence of enzymes to soften tannins
  • 15-18 days fermentation to fine tune acids and textural balance while controlling the temperature
  • fining and stabilizing of wine
  • Fermented in inox tanks
